To the Editor:

Low fat is not the whole story. It is possible to have a very low-fat and unhealthy diet made up entirely of processed foods and animal products.

Fifty-one percent of our calories comes from processed foods; 42 percent from animal foods; 2 percent from white potato products; and just 5 percent from vegetables, fruits, legumes, whole grains and unprocessed nuts and seeds—foods that we know prevent disease and obesity.

We must make the healthy choice the easy and less expensive choice not just in schools, but in all parts of the community.
